Pinwheel sandwiches
Pinwheel sandwiches are easy to assemble, visually appealing, and perfect for lunch at work. They consist of flour tortillas layered with ranch-flavored mayonnaise, sliced cheese, deli meats, and lettuce. The possibilities are endless, with endless combinations of fillings. For a crunchier twist, consider adding goat cheese, hummus, avocado, cucumber, or bell peppers. These can be made ahead of time, refrigerated for up to seven hours, and sliced when ready to serve. Ingredients
- 1/3 c. mayonnaise
- 3 tbsp ranch seasoning
- 8 (10″) flour tortillas
- 10 oz cheddar cheese
- 1 lb deli-sliced turkey
- 16 butter lettuce leaves
Instructions
- Mix mayonnaise and ranch seasoning.
- Lay the tortillas flat. Spread each tortilla with 1 tablespoon of the mayonnaise mixture. Place two slices of cheese on the bottom two-thirds of each tortilla. Top the cheese with turkey. Top the meat with two lettuce leaves and roll it up.
- Slice into 1″ rounds and arrange on a platter. To save for later, place seam side down on a baking sheet and refrigerate for up to 6 hours. Slice when ready to serve.
